Simple side dishes to get more vegetables on the dinner table

Getting enough vegetables has many health benefits like, weight loss, protection from diabetes and protection from certain types of cancer.

According the a new government study, most people are not getting the amount of vegetables that they need. New government guidelines now recommend seven to twelve cups of vegetables at day!

Life gets busy sometimes. So much so, that just getting a healthy home cooked main dish on the table is all you can do. Some side dishes are more work than they are worth, but the truth is, most people do need more veggies in their diet. Below are some super easy and super tasty side dishes to help you get more vegetables on the dinner table.

Green Beans and Almonds

All you need for this dish is green beans, about a tablespoon slivered or sliced almonds, a little olive oil and some soy sauce. In a skillet, the heat oil and stir fry the green beans until warm. Toss in the almonds and soy sauce to taste.

Tip: You can use fresh or frozen green beans.

Yummy garlic spinach

Olive oil, garlic and a bag of fresh spinach is all that is needed for this easy side. Heat a little olive oil over medium heat. Add garlic, cook for about one to two minutes, add spinach. Cook until spinach is wilted.

Tip: Try adding chopped mushrooms while the garlic is cooking.

Zucchini and Tomatoes

Slice two small zucchini. Heat a skillet on medium high with a small amount of olive oil. Add zucchini and stir fry for about four to six minutes. Add a half a can of chopped tomatoes with the juices. Cook for a few minutes, letting some liquid evaporate.

Tip: For some extra flavor add a little garlic.

Simply Sweet Baby Carrots

Steam a small bag of baby carrots. Transfer to a serving dish and add a little honey and butter.

Tip: Try adding chopped walnuts with little cinnamon or nutmeg.

Vinegary Cucumber and Tomatoes

Slice cucumbers and tomatoes, arrange on a plate. Drizzle with balsamic vinegar.

Tip: For an easy light vegetarian lunch add a few slices of fresh mozzarella.

Get more vegetables on the table the easy way.

Tip: Buy the small bags or boxes of veggies that can be heated in the microwave in just a few minutes. While fresh is usually best, any vegetable is better than no vegetable.

Tip: When serving your meal, place the main dish on a bed of spinach. The spinach will wilt a little and will absorb the flavors of the dish. Yummy and hardly any extra work!

Try these great tried and true sides to get more vegetables that your family needs. Even if your family isn't receptive at first, keep trying. It takes time and many exposures to certain vegetables to develop a taste for them. Let these recipes inspire you to make some new veggie sides of your own!
